Q:  How do you pronounce "Beyza"?

A:  Pronounced "Bay-Zah".

 

Q:  Is this a family owned and operated business?

A:  Yes!  Beyza and Mike are the owners.   

 

Q:  Are your desserts handmade?

A:  Yes, with passion and pride!   

 

Q:  How did you get into the Tiramisu and Baklava business?

A:  Here’s the short version … Beyza made her tiramisu for Mike and a short while later they were married!   

 

Here’s the long version … while living in Europe for a total of 15 years we discovered some great authentic desserts that weren’t widely available in the United States, let alone delivered to your doorstep by a click of a button.  Of course, there is a lot of “Tiramisu” and “Baklava” sold in the US, but unless you go to a very high end or specific restaurant in a certain city you simply can’t find anything close to authentic.  Unfortunately, it’s more common that very large companies and their layers of distributors produce and ship very low quality, non-authentic Tiramisu and Baklava in order to maintain their astronomical profit margins.  The result is that American’s often never get to experience the true authentic dessert, an often end up not liking these desserts.  We’ve had so many “tiramisu haters” and “baklava haters”, as we like to call them, enlightened (i.e. converted) after they taste our desserts it is simply astounding.  This is a shame, because they’ve been fed an imposter dessert. 

 

Q: What is authentic Tiramisu?

A:  In Europe, and in our book, the dessert can’t be called authentic tiramisu unless it contains ladyfingers (no cake, layers of pound cake, etc.) and at least 50% high quality mascarpone cheese in its cream mixture.  Our tiramisu contains 72% mascarpone and imported Italian ladyfingers.  The reason most, if not all, producers don’t meet both of these criteria is cost.  Simple “cake” layers or just window-dressing the “cake” with ladyfingers is much cheaper than exclusively using them.  Even more so, mascarpone cheese is the single most expensive ingredient and exactly where others cut corners.  Usually they use very high percentage of whip cream as a cheap filler. 

 

Q: What is authentic Baklava?

A:  Baklava has a long and diverse history so authentic isn’t as straight forward as Tiramisu, a relative newcomer to the dessert scene.  However, we trace our baklava to its century’s old Turkish roots with an specific aim to the American, European, and Middle Eastern palate.  We only use the highest quality ingredients, hand brush butter on each and every layer of fillo dough, and we use honey and not just sugar.  More over it’s what we don’t do that is also important.  Our baklava is purposefully light and sweet.  We often hear that people don’t like the extremely heavy syrup, or the rosewater taste, or the cinnamon taste, or the watery sugar only styles, or the ones that are very picturesque but don’t taste that good because they are hard, full of preservatives, and have a shelf life of 6 months.  Ours is baked fresh and shipped to you, and similar to other fresh pasteries has a shelf life of up to 7 days, but it’s never lasted that long so it’s not really an issue J.

 

Q:  I didn’t know there were so many Tiramisu topping options … how did that come about?

A:  Absolutely correct. The traditional and authentic tiramisu only has a cocoa topping.  However, in addition to that we put a little American ingenuity into our offering and have 14 other options for you.  We discovered that toppings like raspberry, chocolate, dark chocolate, and caramel are amazingly good with Tiramisu.

 

Q:  Do you do custom orders?

A:  Yes!  For tiramisu you can select any liquor or alcohol and we’ll use it.  Anything from Kahlua, Baileys, Limoncello, Grand Marnie, Crème de Cocoa, or any common liquor available. Also, if you have a topping you’d like that isn’t in our current selection we can accommodate that.  The options are really unlimited.

 

Q:  Will you becoming out with more topping options?

A:  Yes!  We have plans to introduce many more exciting options.  Stay tuned!  Join our newsletter for new product and selection announcements.

 

Q:  Are you community oriented?

A:  Yes!  We support Children’s Hospital and Regional Medical Center of Seattle (Infant Intensive Care Unit) for their great work saving our daughter and their continued successes by providing a portion of our profits to them.

 

Q:  Do you deliver?

A:  We use UPS to deliver anywhere in the continental U.S.   We offer the most shipping options available and sometimes offer Free Shipping specials.

 

Q:  Can get your product for our company meeting, festival, event, church event, school auction, girl/boy scouts, etc.?

A:  Yes!  Just place an order or contact us directly for large orders. 

 

Q:  Do you have a retail store I can visit?

A:  No.  We are an internet and wholesale bakery. 

 

Q:  Do you ship internationally?

A:  Not currently.  We may start to ship to Canada in the future.
